I have no idea what behaviors you think are indicative a very human mental state, but guess it has something to do with licking/chewing?

Get thee to a vet with a description of specific behaviors like:

My son died seven months ago at the age of 24 how do I know if he’s in heaven and can he see me and hear me and why have I not gotten any signs yet from him or Mom just not seeing the signs how do I know if he’s OK how do I know if he’s happy?

Licking and chewing are what a dog does when something doesn’t feel right - it itches, it’s in pain, its swollen - or when they are very anxious - canine cognitive decline, loss of a sense like sight or hearing, generalized pain in some other part of the body.
